- Para la pechuga deshebrada
- 1 pechuga de pollo entera
- 1/4 cebolla
- 3 ramitas cilantro
- c/n agua
- al gusto sal
- Para condimentar

- c/n aceite
- 1 cucharada caldo de pollo

- 2 hojas laurel
- 1/4 salsa de tomate

- Primero hervir la pechuga en suficiente agua con la cebolla y el cilantro. Salar a gusto. Una vez cocida deshebrar. No tengo foto de este paso porque por lo general siempre cuando llega el super ya la dejo deshebrada para mis preparaciones, a veces la congelo también así.
- Picar la cebolla en cuadritos pequeños. Licuar los tomates con el caldo y los chiles chipotles. Estos son a gusto pueden poner más o menos, o no poner tampoco.



- Colocar un poco de aceite en el sartén y sofreír la cebolla. Luego agregar el tomate licuado. Cocinar unos minutos y agregar el pollo deshebrado.



- Mezclar bien y cocinar hasta llegar al punto deseado. Depende para que vayamos a usarla quizás es conveniente que esté más seca o más jugosa. Por ejemplo para algunos rellenos si está demasiado jugosa puede ser un problema. Yo en este caso también le agregué 1/4 salsa de tomate para que tome un color más rojo, pero es opcional y a gusto. También agregué en la cocción unas hojitas de laurel.



- Puedes servirla en tostadas como en la foto, en tacos, para rellenar quesadillas, molotes.. También la puedes congelar en porciones para tener siempre a la mano. Que la disfrutes!
